Meatless Burritos are simple to prepare and fun. I love that we can each assemble our burrito the way we want and it always sparks a conversation about the ingredients and kids enjoy the process.

Instructions

  1. Cook the rice in 1:2 water for 10 minutes, and leave it rest for the remaining 10 minutes or until water absorbs.
  2. Heat some olive oil and fry mushrooms and pepper fruit for about 5 minutes. Add the onion, spice mix, salt and garlic for about 3 minutes.
  3. Heat up the tortilla breads and serve in different bowls with the avocado slices, chopped coriander, lime, rice. Enjoy!

Ingredients

  • 200 g Rice
  • 2 Red onions
  • 300 g Champignons
  • 2 Pepper fruits
  • 2 Cloves of Garlic
  • 10 g Tex mex spice mix (paprika, oregano, chili, cumin, black pepper)
  • 1 Avocado
  • 300 g Shreded Letuce
  • 8 Tortillabread
  • 100 ml Greek Yoghurt
  • 2 Limes
  • Coriander
