Pancakes
Breakfast and brunch would simply be incomplete without these fluffy stacks of deliciousness piled high and served with syrup, butter, and all of your topping favorites. I love pancakes and I have been making pancakes since I was a little girl so it is second nature for me to make them and I want to share you some secrets to make fluffy pancakes (every time)!
SECRET 1:
Don't overmix.
Technically, flour develops gluten when mixed with water (milk in this case) and that is what makes the perfect bread chewy and all that. Imagine a baguette. But when making cakes, we don't want them chewy. Besides it does not allow the baking powder to make those light fluffy bobbles.
SECRET 2:
Be precise with the ingredients since we don't want to be adding a little bit more flour, or a little bit more milk and mix again, etc. That will create more glutten.
SECRET 3:
Let the pan heat on medium while you prepare the batter. It should take a few minutes to mix it all ;) Then grease with butter and start cooking the pancakes. Adjust the heat a bit lower if needed. If they cook too quick, you risk to burn them on the outside while they are not cooked in the inside.
