Empanadas

Originating from Spain, empanadas have proliferated across the globe, spreading their irresistible allure. A wondrous combination of crispy pastry and flavorful fillings, empanadas have become a culinary icon in countries such as Argentina, Mexico, Colombia, and the Philippines. These hand-held treats are the epitome of comfort food, perfect for any occasion - whether it's a quick snack on the go or the centerpiece of a festive gathering.

    • Yield:40 tapas style serving

    Instructions

    1. Combine the flour and yogurt in a bowl and mix until it forms a dough. Turn out onto a bench lightly dusted in flour and gently knead the dough until smooth. Set it back in the bowl, cover and set aside.

    2. Heat oil in a large pot, add the diced onion and sauté for few minutes. Add the garlic, jalapeño, red pepper and spices and sauté for further 5-6 min. Add the corn, beans, and tomato paste and cook for few minutes. Remove from heat.

    3. Divide the pastry in 20 units using a knife and roll out each into thin rounds on a floured surface. (Divide into 40 for tapas style serving)

    4. Add the rice and cheese to the cooled bean mixture and combine.

    5. Add 2 tbsp of bean mixture in the middle of the dough rounds and fold in half to seal the edges. If you don't master the traditional sealing technique, use a fork pressing down the edges to seal them.

    6. Place the empanadas on a baking tray lined with baking paper.

    (Optional: Brush the surface of each empanada with a mixed egg)

    Bake at 350F/180C for 20 minutes or until golden. Enjoy!

    Ingredients

    FOR THE DOUGH

    • 2 cups all-purpose flour
    • 1 cup plain yogurt

    FOR THE FILLING

    • 1 tbsp olive oil
    • 1/2 cup red onion, diced
    • 2 cloves garlic, diced
    • 1 small red pepper, diced
    • 1/2 cup corn kernels
    • 15 oz can of black beans, drained
    • 1 tsp paprika
    • 1 tsp cumin
    • 1 jalapeño in small dices
    • 1 1/2 tsp tomato paste
    • 1/2 tsp salt
    • 1 cup of cooked rice
    • 1/2 cup of shredded cheese
