Blinis

Blinis are light and fluffy Russian pancakes, traditionally made with buckwheat flour. These bite-sized delights are perfect for brunch or as an elegant appetizer. Served warm, they have a delicate texture and a slightly tangy flavor that pairs beautifully with a variety of toppings. Whether you prefer them topped with smoked salmon, sour cream, or caviar, blinis are a versatile and delicious addition to any meal.

Instructions

1. Whisk the milk and the egg in a bowl.

2. Add the flour, salt and baking powder and mix with a spatula gently until there are no clumps. Be careful to not over mix.

3. Heat a frying pan and grease lightly with oil or butter. With a small spoon pour the dough on the pan forming small round blinis and cook for about 2 mins. Flip over when bubbling. Set aside. Repeat the process with the rest of the dough.

4. Add a small leave of salat, about 1/2 tsp cream cheese on top, 1/4 tsp caviar, and decorate with watercress or dill. Enjoy!

FOR THE DOUGH:

  • 3/4 cup milk
  • 1 egg
  • salt
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • oil or butter to fry.

FOR THE TOPPING

  • salad blades
  • cream cheese
  • red caviar
  • watercress or dill
